Cheese and Ranch Dressing are two of my daughter’s favorite foods. Sandwiches, for some reason, are among my husband’s favorite things to eat. That makes a meal that combines all of the above a guaranteed winner at my house!
What’s funny is that this was a thrown-together, last-minute supper where I sort of guessed at the measurements as I made the filling. I don’t own a proper panini press, but since this really isn’t a proper panini, it probably doesn’t matter. My parents gave me their old counter-top George Foreman grill (similar to this one) years ago and I use it to grill sandwiches as least as often as I use it to grill other things. A toasted sandwich with gooey filling is hard to beat, no matter what you call it.
Cheesy Chicken Panini

What You’ll Need:
- a package of 8 hamburger buns (the cheap ones from Aldi work just fine)
- melted butter (not much, just to brush the buns)
- an 8-ounce package of reduced fat cream cheese
- about a tablespoon of dry Ranch dressing mix (homemade or purchased)
- about half a cup (or a handful) of shredded cheddar (or your favorite) cheese
- a 13-ounce can of chicken meat, drained (or leftover chicken meat, cut into bite-sided pieces)
What To Do:
Brush the outsides of the buns with a little melted butter. Don’t get them soggy, just use enough to add a bit of flavor and prevent the sandwiches from sticking to the grill.
Mix the cheeses, Ranch mix, and chicken thoroughly in a small bowl to make your filling.
Divide the filling evenly between the 8 buns to make sandwiches. You’ll have maybe a couple of tablespoons of filling per sandwich.
Grill the sandwiches in your press or George Foreman grill until they’re toasted and the filling is gooey.
Serve them warm and have napkins handy!
