3 Things I Crossed Off My List and 1 Easy Lunch Recipe

Jay and I have a busy day planned for today, so I spent a lot of yesterday trying to catch up and dreaming of actually getting ahead.

I started the day yesterday by FINALLY getting my tomato plants in the ground. We’ve had a very cool, wet, and rainy Spring, so I was afraid to put them out any sooner. Shortly after I had them planted an afternoon thunderstorm thoroughly watered them in. Thankfully my son got the “varmint fence” set up before the rain came so my plants will be protected from bunnies and deer. Yes, we have deer in the suburbs! I also found the first ripe mulberry of the season on one of our bushes. Yay! There’s a picture of the mulberry on my Facebook page.

We had Italian Style One Pot Meal for lunch. It was so quick and easy to whip up after a morning of digging in the dirt, and a quick lunch was necessary before I took my daughter to her voice lesson. I used broth from my freezer and pulled the other ingredients from my pantry. No muss, no fuss.

I also took time time yesterday to back up some digital photos and clear the card in my smart phone. While I was waiting for some of the larger folders to back up I managed to do a few other chores, with occasional peeks at the computer to make sure the process was processing. There were a lot of pictures on that phone!

Yesterday I also made laundry soap and more shaving soap for Jay (And maybe some for gifts, but don’t tell anyone!). It wasn’t as much of a soap opera as last time since the kitchen remodel is finished now. The laundry soap is thickening in a bucket in the laundry room and the cakes of soap will cure in the molds until I transfer them to a wire rack later this evening. There’s something very satisfying about having a tidy row of soap molds lined up on the counter, isn’t there?
