No Cook Mocha Cheesecake Dessert

With a blog name like “A Chat Over Coffee” I guess the only surprise about these mocha delights is that I didn’t make them sooner. In my defense, I have family members who don’t care as much for the taste of coffee as I do and at least one coffee-drinking family member doesn’t like cold coffee or mocha at all. But since I’m the one doing the dessert-making and I like mocha, here we go!

No Cook Whipped Mocha Cheesecake Cups

Serves 6-10, depending upon serving size

What you’ll need:

  • 8 ounces cream cheese
  • 3 tablespoons baking cocoa
  • 1/2 cup honey
  • 1 tablespoon homemade vanilla extractHeavy Whipping Cream flavored with Instant Coffee at A Chat Over Coffee.png
  • 1 pint heavy cream
  • 1 single-serve packet instant coffee (the grocery store variety is fine)
  • fruit, preserves, candy, whipped cream, or other layerables (optional)

What to do:

Dissolve the coffee granules in the whipping cream at A Chat Over Coffee.pngPour the cream into a two-cup liquid measuring cup and add the coffee. Mix thoroughly until all of the coffee granules are dissolved. The coffee should dissolve in the cream at A Chat Over Coffee.pngIn a large bowl, beat the cream cheese with an electric mixer until light and fluffy. Add the cocoa powder, vanilla, and honey and mix well to combine. With the mixer running on medium speed, slowly add the coffee & cream mixture until it is all incorporated. Then turn the mixer up to high speed and beat the mixture until stiff peaks form.Whip the cheesecake mixture until stiff peaks form at A Chat Over Coffee.png Spoon the cheesecake into dessert cups, make parfaits, or fill your freezer pop molds.

This filling will work just like the regular cheesecake, the peanut butter variety, or the chocolate cheesecake filling to make desserts. Today I was very, very bad and pulled out my 16 oz iced tea glasses to make huge parfaits. I layered the cheesecake filling with whipped cream to make a giant, creamy, decadent dessert. The one thing I didn’t do was add chocolate curls to the top…maybe next time!
